Homemade Cheese

The thought of making homemade cheese might sound intimidating, but I've found a few kinds that turned out great and were super easy to make.  While I haven't tackled hard cheeses yet, these soft cheese recipes are so easy a child could make them.

Homemade Ricotta Cheese:  So good you could eat it with a spoon.  Use it to make all sorts of Italian recipes or eat with fruit.

Mascarpone Cheese:  lightly sweet Italian dessert cheese.  Here is the recipe for mascarpone and also the best Tiramisu you'll ever eat!

Farmer's Cheese:  I mixed mine with mashed fresh strawberries.  Yummy.
